Chef Nate Kuester

Nate was born in Seoul and raised in coastal Guilford, Connecticut. A graduate of the esteemed Culinary Institute of America, Nate has taken his talents to the kitchen of Aquavit. He’s definitely come a long way from the pizza ovens of Anthony’s to a finalist at The San Pellegrino young chef competition. If stranded on a desert island he would bring Gammeeok’s Kimchi.

Pastry Chef Jess Lee 

Jess, our multifaceted Pastry Chef was born in Seoul and raised in the classics of French cuisine. After graduating from the Culinary Institute she continued to master her skills in the kitchens of DBGB & Gramercy Tavern. Currently, she resides in the Meat Packing District, as the Pastry Sous Chef, at 1 Michelin star Clocktowerr. Her last meal would be a Cote de Beouf for Two...For One. 

Jonathan Eichholz, Sommelier & Cicerone 

Jonathan is a nerd living the dream. A Neuroscientist & Historian turned Sommelier after a summer whispering sweet nothings to cheese in the caves of Murray's. Since graduating Colby College, Jonathan spent some time in the Nation’s Capital at The Riggsby & Garrison before returning home to serve as Head Sommelier at Aquavit. Jonathan was named 2019 Best Young Sommelier in America.He is an Advanced Sommelier, Certified Cicerone and Aficionado of New York Hip Hop.
